The Mater Hospital, established in 1962 by the Sisters of Mercy, a Catholic Order of Nuns from Ireland, began as a 60-bed general hospital. The Sisters of Mercy registered as the Registered Trustees under the Perpetual Succession Act, continuing their mission of providing quality healthcare.
MAIN DUTIES & RESPONSIBILITIES
- Develop daily production schedules in accordance with dietitian-approved menus.
- Lead pre-shift briefings, assign tasks, and monitor portion control to ensure quality standards.
- Conduct temperature, taste, and presentation checks every 2 hours while maintaining digital HACCP logs.
- Train junior staff on modern cooking techniques (sous-vide, blast-chilling) and hospital infection control protocols.
- Oversee the receiving and storage of supplies, ensuring FIFO and 100% cold-chain compliance.
- Act as Executive Chef during menu costing, supplier negotiations, and external audits.
- Address patient/customer feedback within 30 minutes and implement necessary corrective actions.
Qualifications and Experience:
- Diploma in Food Production / Culinary Arts or equivalent qualification.
- At least 4 years of experience in a high-volume institutional or hotel kitchen, with a minimum of 1 year in a supervisory capacity.
- Experience in a hospital or healthcare setting is highly desirable. Excellent verbal and written communication skills are essential for interacting with customers at all levels.
- Strong knowledge of therapeutic diets, costing, Microsoft Office, and inventory management systems.
- Demonstrated leadership abilities, customer-centric mindset, crisis management skills, and integrity.
